Chicken fried quinoa

Have you ever had chicken fried rice? Doesn't chicken fried rice get boring, always the same texture, flavor, nothing new?

Well, I decided to try something new make fried quinoa. It may seem boring, and gross... But once you try this recipe, you will you change your mind. In this recipe you can use whatever ingredients that you want. It's basically a kitchen sink, but a savory  one!







I admit - I started with a generic fried quinoa recipe to get some suggestions for what to throw in, and how long to cook everything. After reading the recipe, it seemed to make the most sense to make the quinoa first. We started the quinoa by rinsing it with cold water a few times. We then cooked it like rice, by following the recipe on the back of the quinoa bag. We then started making the chicken, which is optional, but I wanted chicken so it had to be done. We started by using boneless chicken breasts, and then cut them into bite-sized cubes.  It was then wok time!!  We added some flavors to th  chicken - soy sauce, lemon juice and sesame ginger sauce, as well as some magical spices. We then sautéed all of it and removed the chicken from the swuc, keeping the sauce in the wok. We then took our cooked, and partially chilled quinoa (we weren't expecting the  chilling part and we're very hungry so we only chilled it a little instead of overnight)   We then chopped up some carrots and scallions. Once we finished cutting the vegetables, we threw them the wok and mixed them with the sauce from the chicken. I waited for them to cook and get a nice sear. Then I added in the quinoa and chicken. When it looked done, I fried a couple of scrambled eggs in the middle of the wok and mixed the eggs into the rest of the food.

 You can of course add soy sauce, soy ginger sauce or other sauces to your liking. This meal was so yummy and health -  a meal I would definitely make it again.
